Peach Cream Pie: Gluten Free & Real Sugar Free

Enjoy every last bit of summer with this wonderful delicious Peach Cream Pie recipe - brought to you by the owners of Countryside Amish Furniture! This pie recipe is a triple win as it is gluten free, real sugar free (using xylitol alternative), and it is completely delicious!

Ingrediants 

Pie Crust 

1/3 cup oat fiber

1/3 cup oat flour

½ cup almond flour

½ teaspoon salt

1/3 cup cold butter

1 egg lightly beaten

¼ teaspoon baking powder

2 tablespoons xylitol and 1/16 spoon of pure stevia (1 tablespoon sweet mix (a mixture of xylitol, erythritol, and stevia))

Alternative Pie Crust 

1 cup Trim Healthy Mama baking blend

¼ teaspoon baking powder

½ cup cold butter, cubed

2 tablespoons xylitol and 1/16 spoon of stevia (or 1 tablespoon sweet mix or Gentle Sweet)

Pinch of salt

1 egg, slightly beaten

2 tablespoons cold water

Peach Cream Filling 

1 ½ cups peeled and sliced peaches

1 egg

½ cup sweet mix or Gentle Sweet

3 tablespoons cornstarch

½ teaspoon vanilla

1 cup cream

Cinnamon for sprinkling

 Sweet Mix

1 ½ cups erythritol plus 2 tablespoons

2 cups xylitol plus 2 tablespoons

2 tsp pure stevia

Instructions

Pie Crust 

Mix dry ingredients. Cut in butter. Add egg and water. Mix just until it comes together. Shape into a thick round disc with your hands. Place on a piece of waxed paper dusted with oat fiber. Dust top with more oat fiber. Place another piece of waxed paper on top. Roll out with a rolling pin. Peel off paper, fold dough loosely in half and transfer to a 9 inch pie plate. Unfold and press against sides of pan. This dough falls apart more easily than traditional pie dough. If it does fall apart, just use your hand and press it back together in the pan. Spray the pie pan with cooking spray. I use coconut oil or grapeseed oil spray. Bake for 8 minutes at 350 degrees. Remove from oven and fill with pie filling.

Pie Filling 

Place peaches in bottom of pie shell. Beat together rest of ingredients except cinnamon. Pour over the peaches. Sprinkle the top with with cinnamon. Bake at 325 for 35-45 minutes or until a knife inserted in middle comes out clean.This is based on the Trim Healthy Mama eating plan. Please note cornstarch is not considered on plan. I have not found an alternative that provides a smooth, creamy texture. However, it is gluten free.
